Can you eat healthily on a budget?

Yes! Veggies are super cheap, especially those in season so fill up your plate with veggies.. they’re packed with fibre, vitamins and minerals, they’re alkaline and they don’t contain fat…

Eat meat and fish but choose quality products and eat a bit less of them to reduce the cost…

Pack your stews, casseroles, soups and salads with lentils, chickpeas, beans etc. They’re super cheap and very easy to prepare and are great sources of fibre, protein and vitamins.. they count as one of your 5 a day…

Use up ALL of your leftovers… don’t waste food. This photo shows a frittata I made using leftover roasted squash, leftover steamed peas and sweetcorn from dinner the night before and a little square of cheese that was going a bit hard but was fine grated and stirred into the egg mixture.. A quick, nutritious and budget meal.. Jazz it up with some dried chilli flakes and plenty of black pepper..
